So clearly there is a bit on a trend going on with my recipes as of late! I’ve been having quite the obsession with Energy Bites the last 6 months and am having so much fun trying out and creating new recipes. I just love a recipe where everything can be mixed into just one bowl or a food processor, and then requires such minimal clean up. I have even been challenging myself with “eye measuring” lately… where you don’t really measure your ingredients at all, so there’s even less dishes! Haha. I had one fiasco with some muffins not setting fully, but other than that, they’ve all worked out pretty damn well! Don’t worry though, this recipe has been measured well to ensure I’m setting you up for a successful “non baking” session.
Like I said above, this recipe literally has all of the ingredients thrown into one bowl. That’s it, that’s all. So grab the biggest bowl you’ve got and get ready to prepare!

In this recipe you will use: natural peanut butter, unsweetened coconut flakes, chia seeds, honey, seasame seeds, hemp seeds, flax seeds and old fashioned oats.
Put all of your ingredients into the large bowl and mix it up well. Before rolling up your bite sized snacks, pop the mixture into the fridge for 15 minutes to allow for easier rolling.
When you are ready to begin rolling, take a tablespoon to scoop out the mixture for each ball. That will keep them consistent in size… unless you want a variety of sizes for your eating preference depending on your appetite 😉 It really is up to you and whatever you would enjoy most!

That truly is the amazing thing about Energy Bites, depending on what you are into and what you are craving… you can really make these your own! I’m a huge fan of texture, so I actually enjoyed mixing these in a bowl vs. Some of my other recipes that blend everything together using a food processor. A little more chunky, so take that into consideration when making, depending on your preference.
You could easily make these more of a peanut butter snack with nuts and peanut butter chips or turn them into a trail mix with a variety of chopped nuts and cranberries or something completely different. Endless options make me a happy girl!!!

Chocolate Oat Energy Bites
1 cup Old Fashioned Oats
2/3 cup unsweetened coconut flakes
1/2 cup natural peanut butter plus an extra tbsp or two!!
1/2 cup ground flax seed
1/2 cup semisweet mini chips (or chocolate of choice)
1/3 cup raw honey (or maple syrup or Agave Syrup)
1 tbsp chia seeds
1 tbsp hemp seeds
1 tsp vanilla extract
1 tbsp sesame seeds
1 scoop cafe latte protein powder (vanilla or chocolate works too) I just LOVE cafe latte flavour 🤪
My favourite part of this recipe is how easy it is!!! Literally, put all ingredients into a large mixing bowl and mix thoroughly.
**If mixture is too sticky, add more oats or dry ingredients. If mixture seems to dry to roll into balls, add more peanut butter.**
Cover and put into the refrigerator for 15-20 minutes.
Once the mixture is chilled, use a tablespoon to scoop up the batter and roll into balls. Mine were rolled into a two bite balls, but do whatever size works best for you!
Recipe makes approximately 24 balls (depending on size) . These can be stored in an airtight container for approximately 1 week in the refrigerator, a month in the freezer.
Enjoy them often ❤
