
I LOVE pumpkin spice. Some people are more so into chocolate or mocha… but not me. Is it true that you normally prefer one over the other?! It’s definitely so in my case. And well, what better way to prolong the “pumpkin spice season” than by creating an energy bite with that flavour for the dead of winter!! Lol
This recipe is so simple…. so very simple in fact, that I made it with one bowl, one spoon and one plate in less than 15 minutes. Perfection… right? I’m all about the quick and easy because as a mama to a very vibrant and busy toddler, I need quick fixes.
Now as you have have noticed… I’m a free pourer, I rarely measure anything unless it’s a very specific recipe that I know needs it to set properly to be edible. Everything else though is free game to my unwillingness to have to do more dishes than I want too.. Don’t worry though, I have measured it out before and I will include the exact measurements below to help you out!


Start out with a large bowl and add in all of your ingredients at once. Stir up the batter until a smooth consistency is formed. Batter should be formable into balls without being too sticky or crumble in your hands.

Pumpkin Spice Latte Energy Bites
- ¾ cup dry rolled oats
- ¾ cup all-natural smooth nut butter (I used peanut butter)
- ½ cup pure pumpkin puree
- ¼ cup honey
- 1/4 cup unsweetened shredded coconut
- 1 tbsp cinnamon *optional
- 3 scoops Pumpkin Spice Plant-Based Superfoods
Combine oats, nut butter of choice, pumpkin purée, honey, superfoods powder and coconut into a large mixing bowl. Mix well with hands or spatula.
Once batter is mixed well, roll into tablespoon sized balls. If mixture is too dry, add a few drops of water if too wet, add more oats or coconut.
Serve immediately or store in refrigerator For up to 3 days OR into the freezer for up to a month. Enjoy pre or post workout and well… whenever ❤
