
I had the most fun call this week with my community! We do these weekly calls where we discuss nutrition, fitness, health and wellbeing… sometimes we just drink wine and shoot the shit. lol. They are such a blast and have brought us so much closer than ever before!!! In a time where this world is more distant than ever, this community has brought me the love, support and connection I have truly needed. Anyways, this week we decided it would be a blast to do a recipe together….. enter “Cooking with Kristin!” 🙂
How often do you get online with your friends and cook a recipe together? This is something Im looking forward to doing now at least once a month. It doesn’t have to be this big community call, even just connecting and sharing your favourite recipe with a friend can be so special.
Anyways, this week I rocked out another energy bite recipe… mostly because I keep creating new ones and they get better and better! So roll up your sleeves and let’s get this quick and simple recipe on the go!
You will need medjool (or another variety) dates, natural nut butter, your favourite nuts, dark chocolate chips, vanilla extract, superfood powder, cocoa powder and sea salt. For the easiest and best consistency, a food processor is perfect. If not, it may take a few extra minutes to prepare!
Firstly, it’s important to have softer dates when you want to food process or blend them, so I highly recommend soaking your dates in warm water for 5-10 minutes prior to making. If they are fresh and soft you can skip this step. I normally start by throwing my nuts into the food processor for a quick crush, so they aren’t so large when I add everything else in. You could also chop these to a consistency and size you like. I still prefer texture, so I don’t crush them too small.
Now you are ready to add in the other ingredients. Put everything into the food processor together, no order necessary for this…. Seriously, it’s that easy! A few simple steps and a minimal amount of dishes has and will always be my style.

Begin to blend, crush, pulse your mixture until the ingredients are all mixed together. You want them to be crumbly, but not too dry or too sticky. You should be able to grab a tablespoon of the mixture and roll into a ball without much residue being left on your hand. If it crumbles in your hand, add a tablespoon of water at a time and continue processing.
I usually make these with an overflowing tablespoon scoop, so they turn out to be a decent size. You should be able to make 16 balls. Afterwards, store in freezer until solid (30 minutes to an hour). Afterwards you can store in the fridge for up to 10 days OR in the freezer for up to 3 months. I always store mine in the freezer because I enjoy them as a mostly frozen snack!
The best part about these is you could have them as a pre or post workout, breakfast, a midday snack or as a dessert. They are that good! Additional bonus?! MY 4 YEAR OLD LOVES THEM!! Winning! Lol

Chocolate Brownie Energy Bites
- 1 cup Medjool Dates (approx 10 dates)
- 1 cup natural nut butter (I use crunchy peanut butter)
- 1 cup nuts (I always use a variety… my favourite are raw almonds and raw cashews)
- 1 scoop Vegan chocolate superfood powder (buy it here)
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1-2 tbsp dark chocolate chips
Soak dates in warm water for 5-10 minutes if they are harder. Chop or blend nuts a little before hand, unless you don’t mind them chunkier. Throw all ingredients into the food processor together. Your mixture should be crumbly, but you should be able to form into a ball with your hands. Not too dry or too sticky.
Roll into 16 balls using an overflowing tablespoon scoop. For extra chocolate, you can also roll them into chocolate shavings or mini chocolate chips or cocoa powder. Freeze for an hour or until solid. Will keep up to 10 days in the fridge or 3 months in the freezer.
